Chocolate Chip (Pudding) Cake

As a kid, I never liked regular cake. That all changed when my Mom received this recipe from Sis. Sally Terry. Even to this day it is my favorite kind of cake! It is a choca-holics dream come true! LOL! The extra pudding makes this cake super moist and adds great flavor. It's also super easy to mix up in a hurry! Great for unexpected company. Caution: it is rich & addicting! =)


Chocolate Chip (Pudding) Cake

FROM: Sally Terry
SERVINGS: 10-12
CATEGORY: Dessert
METHOD: Bake
TIME: Prep Time 15mins/Bake Time 25-30mins/
Total Time 40-45mins

Ingredients:
1 sm. Box Chocolate Pudding (COOK & SERVE,NOT INSTANT, will need Milk)
1 Moist Yellow Cake Mix (Do not follow directions on box)
½ C. Oil
½ - ¾ Pkg. Semi-Sweet Chocolate Chips
½ C. Chopped Walnuts or Pecans for top (Optional)

Directions:
Place dry cake mix in lg. mixing bowl. Cook Pudding on stove top according to package directions. When ready, carefully pour hot pudding in bowl w/ dry cake mix. Mix, well-about 100 strokes or so. (May have a few lumps) Add oil. Mix well.
Pour into greased & floured 13x9 baking pan.
Top with Chocolate Chips & Nuts. Bake @ 350 degrees for 25-30 mins. Check at 25mins. Done when knife pulls out clean. Let cool briefly before cutting. Taste great warm or cold!

Oh my goodness!!!! That looks soooo good! I am going to try that as soon as I can! =) (wish I had a piece right now....haven't had breakfast yet)

LOL! Yeah, I don't make this too often cause I could eat the whole thing myself! =)

You tell'em Sarah! I guess they all liked harassing me about getting this going, but really wanna leave all the work up to me! At least I have one good friend to count on! =)

I have a challenge at my house with recipes. I have a very picky husband and 2 kids with allergies. It makes it very hard to find recipes that meet all the criterias...

Poor you...I feel for you girl! I don't know if I could handle all that! Your boys can't help their allergies, but I'd not be so accomidating to the hubby! LOL!

Fortunately my honey eats what I make and other than a few complaints about wishing for something a little more spicy or seasoned, he likes what I make!

I'll remember your woo's when I think I have it tough! =)

Well, I should give Jariah some credit, lol! He has been trying! I have gotten him to eat a few things over the years that he didn't like before...it's a working progress :o)

We grew up on cereal... and about 5 recipes that my Mom (who is maybe the pickiest eater in the world...) likes to make and eat. We didn't eat alot of variety. The first time I had Chinese food I was 14 and Mom and Dad took me out to Hunan Gardens just so I could try some before going there with the youth groups. (Before that when the youth went there I either skipped it or made Justin drive me thru Burger King so I wouldn't be embarressed about not knowing what to order!)

My mom's a very creative person, but not when it comes to food. =)

BTW... I did try to send some recipes to you, Laura. It doesn't seem to have worked though. I'll try again later. =)

I've done this recipes with chocolate cake mix (I think I got it from Taste of Home) MMmmmm...I'm gonna have to make it again soon!!!!

I haven't done it that way, though I have done a chocolate cake mix with vanilla pudding before...turned out pretty good too.
So the double chocolate didn't make it too rich to handle!!?? =)

Well, I made this cake on the weekend for some company we had from AZ. We all liked it. It was very moist....almost like cake meets brownie. I probably would actually use a chocolate cake mix, 'cause I like a little more of a deeper chocolate flavor. =) Will definitely make again.
