Salsa Chicken

I just tried this one the other day for the first time and Zion and I both thought it was delicious. We have just started a low energy density diet, and this met the criteria we needed. I served it with refried beans (the canned kind, he’s the Mexican, not me!) with a little bit of mozzarella cheese melted on top. I got this recipe from allrecipes.com. It's very simple but something I had not previously thought of. (I’m not quite the culinary expert Laura or Sarah are… but I come by it honestly!!!) =)


Salsa Chicken

FROM: Jeshanah Ramirez/ allrecipes.com
SERVINGS: 4 (can be easily adjust for more or less)
CATEGORY: Main dish/Meat
TIME: Prep Time 5 mins./ Cook Time 25-40 mins.
Total Time 35-45 mins.

Ingredients:

4 skinless, boneless chicken breast halves
4 tsp. taco seasoning mix
1 C. salsa (of your choice)
1 C. shredded Cheddar cheese
2 Tbs. sour cream (optional)

Directions:

Preheat oven to 375 degrees. Sprinkle taco seasoning on both sides of chicken breasts. (For even cooking, pound each chicken breast to the same thickness) Place chicken breasts in a lightly greased 9x13 inch baking dish. and pour salsa over all. Bake at 375 degrees for 25 to 30 minutes, or until chicken is tender and juicy and its juices run clear. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

Going by the ingredients, this recipe can be easily altered from mild to hot salsa depending on preferred taste. That's a great plus. It can also be pared with a number of complimentary Mexican style sides like Mexican or Spanish rice, Mexican corn and/or the refried beans Jeshanah mentioned!

Since I hadn’t posted a main dish lately I decided to go ahead and get this one up. Now you all better get busy trying out something new! =)

This looks really good, and actually easy enough that I could pull it off on a game night! Thanks, Shan! =) And thanks for the nice comment about my cooking. I don't get a lot of credit around my house these days, with SOMEBODY else hogging all the cooking compliments! ;)

I guess I am doing a Rut Buster recipe marathon week!=) This is the THIRD recipe I have made from here in less than a week! I made the chicken last night, and we all really liked it.(with the exception of Luke because he doesn't really like salsa) It was very flavorful and easy! I made the cream cheese corn as a side, which I will comment about on its post.
