Cream Cheese Corn

My Mom got this recipe way back when from Sally Terry also! It has been a keeper through the years and many have requested the recipe when I've made it. It's a great and easy way to change up a common side veggie. I have used light ingredients for this recipe and still had tasty results! This is also a recipe that can be cut in half or doubled easily. You can adjust the few ingredients to your preferred taste. If cream cheese and corn sound weird together, just try it...you'll be surprised!

Cream Cheese Corn

FROM: Sally Terry
SERVINGS: 6-10
CATEGORY:Vegetable, Side Dish
METHOD: Stove top
TIME: Total Time 15-20 mins.

Ingredients:

1 Stick margarine (or butter)
4-8 oz. cream cheese
Salt & Pepper to taste
1 12-16oz bag frozen corn

Melt margarine and cream cheese in med. size saucepan over low-med heat till mostly melted. Stir often. Add corn, salt and pepper. Mix well. Let simmer on low-med heat stirring occasionally for approx 10-15 mins. Done when corn is heated through.

Yaaay! A new corn recipe to try! I love cream cheese, so I can't imagine how this couldn't be good! Now if I could just get the time to try all these recipes....I'm not having much time to cook with all the baseball and softball games a week. Good thing the kids love bean burritos! =)

Hummmm...I've never made this for you all before?? Guess we just don't get together like we should, eh? =)

So your kids are living on bean burritos, huh? Poor things! John needs to teach them that song he's tought the girls..beans beans the magical fruit, the more you eat the....ok we'll stop right there! LOL!
(I don't think their a fruit but guess you gotta use what rhymes! ha!)

This recipe is very similar to one that James's roommate's girlfriend fixed in college. She add browned hamburg to hers and it was so good.

This is her recipe:
1-2 pounds of Hamburger
1-2 cans of corn
1/2 - 1 block cream cheese
milk

Brown the burger and the rest after the grease is drained off.

I made this last night as a side with Shan's Salsa Chicken. I thought it was a nice change up to serving plain corn. I decided to half the recipe because Abbie and I really don't care for corn that much. I think I used a little too much cream cheese, but other than that it turned out good! Abbie said it was her favorite way to have corn now; but Luke, who loves plain corn, said he wasn't so sure. Just can't please 'em all! =)

P.S. I think I might try Jeannie's recipe for it with the hamburger sometime, too. Sounds good and fast!
